1 lb. Rao’s Pappardelle Pasta- ¼ cup Rao’s Extra Virgin Olive Oil
- 2 – 28 oz. cans of Rao’s Imported Italian Peeled Tomatoes, hand crushed
- 6 hot or sweet Italian sausages
- ¾ cup chopped onion
- 1 ½ cups dry white wine
- 6 fresh basil leaves, torn
- Pinch dried oregano
- Freshly ground black pepper to taste
- 2 tablespoons freshly grated Pecorino Romano cheese (optional)
Remove casing from sausages and break meat up into chunks. Heat Rao’s Extra Virgin Olive Oil in a large sauté pan over medium-high heat. Add onions and sauté for 3 minutes until just translucent. Add sausage and sauté for about 5 minutes or until lightly browned. Drain off excess fat.
Add wine and stir to combine. Raise the heat and bring to a boil. Lower heat and add tomatoes and simmer for about 20 minutes until sauce has thickened slightly. Stir in basil, oregano and pepper.
While sauce is simmering, cook the Rao’s Pappardelle pasta in a large pot of rapidly boiling water until al dente. Drain and return to pot. Stir in ½ cup sausage sauce. Toss together. Transfer to a large serving platter. Spoon remaining sauce over the top and sprinkle with 2 tablespoons of Pecorino Romano cheese.

hey, sounds great but, you forgot to print when to add tomatoes to pan..it seems like common sense to me but some people just may not know……..
Thank you we have corrected that omission. You can add the tomatoes after the wine.
This is an awesome recipe. the ingredience are perfect match to each other. I’ve made this m,any times and tried different variations BUT yours is the best.
My cousin is a friend of the Pellegrino family…
he has recently been ill and when I asked if I could make him something special he said this….
and he said it made him feel better!!!! so, since I am the family vegetarian and didn’t even taste this it must be wonderful….oh, I used 1/2 sweet and 1/2 hot sausage….I am making it again for same cousin
This has become my “go to” recipe when I want a quick, delicious pasta dish. I think I will make it again tomorrow!
