
- 2 cans Rao’s Imported Italian Peeled Tomatoes
- 1/4 cup Rao’s Extra Virgin Olive Oil
- 2 oz. saltpork, cut in small pieces (opt.)
- 3 tablespoons minced onion
- 2 garlic cloves, peeled & minced
- 6 leaves fresh basil, torn
- Pinch of dried oregano
- Salt and pepper to taste
Place Rao’s Extra Virgin Olive Oil in a large saucepan over medium-low heat. Add saltpork to pan. Saute 5 minutes or until fat has been rendered. Discard saltpork. Saute onion for 3 minutes or until translucent . Add garlic and saute until just softened. Stir in Rao’s Imported Italian Peeled Tomatoes, reserved juice and salt. Reduce heat to a very low simmer and cook for about an hour or until flavors have combined and sauce is slightly thickened. Stir in basil, oregano and pepper and cook for an additional minute. Makes 7 cups.

Hi, I made the sauce last night but after the hour of cooking that it said in the recipe the sauce was extremely acidic. I cooked it for a lot longer and added about a table spoon of sugar. It got a little better but not quite enough.

That jar of vodka sauce was made on October 24, 2006. For best quality we recommend use within 3 years.

Hi, I used to be able to find your Cuore DiPomodoro sauce in lower Manhattan, at Food Emporium and a couple other places. Now I can’t find it anywhere, just Marinara and Vodka I think. I ordered 3 jars from your site, but is there anywhere Downtown I can buy it?

I worked for years in a small Sicilian restaurant, and the scratch-made marinara made it impossible for me to buy marinara in the store…until I chanced across Rao’s. My wife and I have been buying a jar a week for years now, and I just won’t have anything else. It is so good that I’ll finish it off with a spoon if the pasta is gone.

Does it matter what type of cooking pot you cook sauce in? Some say metallic pans add acidity to the sauce.
I just got done eating Rao’s Marinara Sauce and OMG it is very delicious! This is the first time I had Rao’s and I am going to buy it again. And I can’t wait to make the sauce myself, I am happy that my sister’s friend introduced me to this. I am glad I can find it at my local market in upstate New York.

The salt-pork should be MANDATORY not optional. It just adds so much great flavour. The only thing I add more of is basil and use 10 instead of six an extra garlic close and 1 additional tb. spooon of onion. For a double batch 3 tablespoons of salt is perfect! I used Goya extra-virgin but just ordered Rao’s olive oil.
I have made alot of recpies from your books, as a fellow pizzone………… I must say they are all great… the meat balls are the best…. when are you going to publish you new sauce recpie, sausage mushrooms, ( meal in a jar)…. I could just eat this sauce with bread . it is so yummie..

I haven’t had the jarred sauce, because I make this recipe at home. It is easily the best I’ve ever had. I’ve used my grandmother’s recipe for decades, one that she got from a nice Italian lady from the nieghborhood back in the 1940′s, and it was great, but this is better!
I recently bought a jar of Rao’s Marinara sauce. It has been in my cupboard for probably a month. I added it to my homemade meatballs and was pleasantly surprised at how homemade this sauce tastes. However, I cannot remember where I purchased it. I’m in Oakville Ontario Canada. I’ve been back to most of the stores that I frequent but they don’t sell it. Can you give me a hint?

I made your marinara and meatballs..What can I say? My mother was a big fan of your restaurant and the sauce (gravy..Iam a real Italian) unfortunately she passed from cancer at the age of 67.
